I’m Kevin, best known as “Mr. Fix It”! I’m the laid-back half of our distillery team. While I’m not always present when guests arrive at the distillery I am hard at work behind the scenes making our spirits and tending to farm duties. With a “Honey Do” list a mile long I stay busy…and mostly out of trouble but if you do see the guy with the long gray beard that’s me - please stop me and say hello. I especially love to share my knowledge about distillation with folks visiting.
I’m Natalie Joy, of NJoy Spirits and considered the “Go to Gal” behind the distillery operation. I’m the overly energetic half of the team and best known as a “Fire Ball”. Although I love distilling, I am also an avid gardener and animal enthusiast. I also love a GREAT party! Need to host an event – I’m in. Let’s get busy planning….Parties and gatherings are my thing.

We like to dream big and to “Create”. Whether we are creating a spirit to release or creating a space for guests to enjoy – creating is our jam! We are naturalist and get inspiration from the natural beauty around us. We hope you will take a day to visit us - where you are assured to find bountiful wildlife, peaceful surroundings, good food and excellent local made spirits. You might even see an old gray lab named “Rummer” who especially loves belly rubs….

Our Business
NJoy Spirits is located on an 80 acre farm facility in Hernando County, Florida surrounded by the beautiful Chassahowitzka Wildlife Management Area. The distillery is known as one of the first “Certified Farm” distilleries in Florida. The company began in 2010 when only 4 other distilleries existed in Florida and began selling wholesale to a distributor in 2012. The distillery grows non-GMO grain with a focus on organic farming practices.
When the distillery began, the goal was to make the finest rye whiskey on the market. We have achieved that goal and Wild Buck American Rye Whiskey has won a handful of Gold medals from top competitions. Additionally, the whiskey is served at many fine dining establishments throughout Florida. At 100 proof the whiskey is smooth, full of incredible flavor and best served on ice or combines nicely in top shelf Old- Fashioned or Manhattan cocktails. The whiskey is aged a minimum of 6 years but single barrels bottled are available at higher proof to now include a 10 year old single barrel bottle selection offered only at the distillery.
Mermaid Rum was introduced in 2016. Our 2 time “Double Gold” Award Winning Rum is 100 proof Agricole Rum made from a portion of our farm raised Sugar Cane. The cane juice is fermented and aged in our once used Wild Buck Whiskey barrels for a minimum of 3 years. Older rum is available at higher proofs as well. Mermaid Rum is served at many higher end restaurants and bars and considered an “Over-proof Island style” rum well suited for tiki cocktails or served neat.
Ryes In Shine Moonshine was introduced in 2017. This 150 proof 100 % 401 Black Rye Whiskey un-aged is undeniably smooth. The moonshine has a gin type quality paring well in distinctive cocktails. Due to the higher taxes on this proof bottle – this product is not regularly available for purchase at the distillery and not available in stores. Typically during the holidays we feature this product only in limited bottling runs.

We are very proud of our products and proud of the attention to detail we maintain in making a superior spirits. “Quality over Quantity” is our motto. In growing over the past 15 years we realize our loyal patrons are the key to our continued success. Our products are available for purchase at the distillery during our business hours. If more convenient to your location - please ask your regular liquor store to carry our products if they don’t currently stock our items. Our distributor is Johnson Brothers of Florida in Tampa. Our spirits are normally well stocked at local Tampa Bay chain liquor stores such as Total Wines and More and ABC Fine Wines and Spirits plus available at many independent owned liquor stores as well. Distribution is throughout Florida only. Bottles cannot be shipped and are not available online at this time from our location.
